RECIPES

Chemo Popsicles, reprinted from Breast Wishes: Nuturing Yourself on Your Medical Journey, by Mary Olsen Kelly. Recipes by Barbara Curtis, Mary's sister.

These two recipes were invented to provide something edible for the days when you are feeling most nauseous. The tofu gives some protein, the fruit and juice gives you some liquid. This will help you make it through those days; it certainly helped me.

Mango Orange Tofu Popsicles
1 8-ounce glass of fresh-squeezed orange juice
1 package of frozen mangoes
1 package of square tofu, medium firmness
About 4 ounces of passion fruit/orange juice blend

Put all ingredients into a blender. Blend to liquefy. Add more juice if it's too thick. It should be the thickness of a juice smoothie. Pour blended mixture into Tupperware or plastic popsicle molds. These can be found at Longs, Tupperware, or any Cooking/Kitchen shop.

Raspberry Banana Tofu Popsicles
1 cup frozen raspberries
1 banana
8-10 ounces of fresh-squeezed orange juice
1 package of square tofu, medium firmness

Blend all ingredients in blender. Add more juice if needed. Pour blended mixture into Tupperware or plastic popsicle molds. Make the Popsicles when you are feeling good. Freeze them and you will be glad to have them later.
